coin purse tuesday + recipe

dish and spoon fine foods - baby spinach, basil and macadamia pate - $8

Today's coin purse tuesday comes with a receipe to boot...quick, simple and delicious using a yummy dip from Dish & Spoon Fine Foods....who could ask for more?

2 tblsp olive oil
1 onion diced
500g chicken thigh
500g penne pasta (or pasta of your choice)
1 jar of Dish & Spoon - Baby Spinach, Basil & Macadamia Pate (370g) - $8
300ml light cream

Cook pasta as per instructions and drain.
Heat oil in pan and brown onion.
Add chicken and brown.
Add jar of Dish & Spoon and mix through and continue to cook chicken until almost ready.
Add cream and cook for a further 5-10 minutes or until chicken is ready.
Add pasta and mix through.
Serve with grated/shaved Parmesan cheese.
