Goodness me how the year seems to be flying out of control towards the end of the year!!
This week, we've been having our share of take-away meals...but one afternoon I saw some really nice asparagus spears so picked up a couple of bunches.
Instead of leaving them forgotten in the crisper drawer until thrown away slimey and unused...I actually made one of those delightfully simple meals that seem to happen almost by accident and after-thought, but then you enjoy them so much you promise yourself to do it again and again!
Enjoy a lovely weekend - visit a farmer's market, have a picnic - what's your favourite thing about this time of year?? I love being outside and not melting in the heat yet.
Inspiration: peel asparagus stems and roast in the oven with some olive oil till tender.... serve with lemon juice, parmesan cheese and a boiled egg.
