Time to get in weekend mode!!
Last Sunday my 8 year old daughter and I visited the Boutique Markets as customers instead of a stall-holder for a change.....what a lovely time we had, browsing all the gorgeous stalls full of goodies. It really topped off a beautiful relaxing weekend as we'd started the day with my famous pikelets - try a batch this weekend and I dare you to stop at just one plate full!
Taryn's Pikelets
1 1/2 cups SR flour, 1 1/4 cups milk, 1 egg, 1 tsp sugar, pinch salt, 2 dsp butter.
Mix all together with electric beaters until smooth then heat a pan (lightly greased) and pour large spoonfuls of mixture into the size you'd like. Turn when they start puffing up with bubbles but before the bubbles break, brown on the other side, then serve with lemon and sugar or as we like them - drowned in oooey gooey lakes of Maple syrup!
If you happen to have any left - they are lovely cold with jam and butter too.
