Gourmet Wednesday


An ode to all the mums out there with children home on school holidays....

Pat-a-cake, pat-a-cake, baker's man.
Bake me a cake as fast as you can;
Pat it and prick it and mark it with B,
Put it in the oven for baby and me.
Patty cake, patty cake, baker's man.
Bake me a cake as fast as you can;
Roll it up, roll it up;
And throw it in a pan!

Easy Peasy Patty Cakes

Ingredients:
125g unsalted butter, softened
125g caster sugar
2 large eggs
125g self-raising flour
1/2 tsp vanilla extract
2-3 tbsp milk
Preheat oven to 200 degrees.
Beat butter with sugar until creamy.
Add milk a tablespoon at a time and in between add a bit of flour - I just mixed in with a spoon. Add the eggs - still gradually putting in flour.
When you've put all the flour in, add the vanilla extract.
Bake for 15-20 mins until cooked and golden on top.

Ice and decorate with sprinkles and lollies!
