Gourmet Wednesday

Look what I picked up today...glorious pink fresh rhubarb!
So to make a treat for dinner tonight I'm doing a comforting....

Rhubarb Crumble

In some shallow water, stew the rhubarb until soft.
Divide between 2 or 3 oven proof bowls depending on size.
Mix 2 tablespoons of butter with 1 cup self-raising flour and 1/2 cup brown sugar with your fingers until it becomes like breadcrumbs.


Place the crumble mixture over the rhubarb and bake at 180 degrees for about 15 mins or until golden. You just HAVE to have these warm with good quality vanilla icecream!
