Nice to be back after a few days of 'technical difficulties'....
anyway, today we share with you... 

Stuffed Chicken Breast wrapped in Pancetta

4 chicken breasts
4 tbsp cranberry sauce
300g gorgonzola cheese
24 slices pancetta
olive oil
salt, pepper

Heat oven to 200.
Place each chicken breast between 2 sheets of cling film and using a meat mallet, 
bash out until about 1/2 cm thick.  Spread 1 tbsp cranberry sauce over each breast.  
Place a piece of cheese in the middle, season and roll u p the chicken to enclose the cheese.  
Place 6 slices of pancetta side by side on a board, 
place breast on the pancetta and tightly wrap around the chicken.
Repeat with remaining chicken and pancetta.
Place the breasts on a baking tray, drizzle with a little olive oil and cook for about 20-25 mins.
Meanwhile, to accompany the chicken, blanch some green beans for a few mins in boiling water 
and then refresh in iced water.  Toss the beans with a drizzle of lemon juice, 
olive oil and season with salt and pepper.  
Serve together and enjoy!
