Perfect still-warm out of the oven on a cool day...

Apple Teacake

1 egg
1/2 cup caster sugar
1/2 cup milk
1/2 tsp vanilla
30g butter, melted
1 cup SR flour
1 apple, peeled, sliced
extra melted butter
cinnamon sugar

Grease 18cm cake tin and preheat oven to 180.
Beat egg white until stiff, then gradually beat in sugar, then egg yolk.
Stir in milk,, vanilla and butter.
Sift flour and fold in, then put into tin and top with the sliced apples.
Bake 20-25 mins. 
While still hot, brush top with extra melted butter and sprinkle with cinnamon sugar.
