All this cold weather had me yearning for a healthy soup today,
so I made up the simplest thing out of what I had already at home...
and it was delicious...even had seconds!

So...fry off 1 large onion, 1 carrot and 1 zucchini -
 both diced and using good quality olive oil.
Add 1 tin of whole tomatoes, 1 tin of crushed tomatoes and 1/2 tin of lentils.
Simmer for 15 mins with 1/2 a stock cube crumbled in, 
about 1/2 cup water and 1/2 bunch of chopped Italian parsley.
Serve with a couple of slices of cheese - parmesan would be lovely...
(I only had cheddar, but that was still yummy!) and a grainy bread roll.

Winter perfection.
