Tomato Tartlets

ready made puff pastry, thawed
2/3 cup packed cheddar cheese, grated
3 medium tomatos, sliced
4 tsp olive oil
salt and pepper
1/3 cup small basil leaves, for serving


Heat oven to 200 degrees. With a biscuit cutter or cup, cut out 10 rounds and transfer to 2 lined baking trays.  Using a fork, prick all over each round.  Sprinkle 1 tbsp cheese on each, and top with a tomato slice.  Brush with oil and season with salt and pepper.  Bake until pastry is golden at edges, 25-30 mins.  Cool in racks and to serve top with basil.
