Spaghetti Bolognese Sauce
Ingredients
- 60 ml olive oil
- 1 stick of celery, washed and sliced
- 2 cloves of garlic, crushed
- 1 large onion, finely chopped
- 1 red capsicum, seeded and cubed
- 1 carrot, peeled and cubed
- 6 bacon rashers, cubed
- 200 ml beef stock
- 100ml red wine
- 3 tablespoons tomato puree
- 400g tin of diced tomatoes
- 1/4 tsp of freshly grated nutmeg
- 1 tablespoon fresh basil
- 500g lean mince
- salt and pepper to taste
Method
1. Heat the olive oil in a large heavy pot and add the garlic, onion and the vegetables, and cook for 5 minutes. Add the bacon and fry for another 2 minutes.

Add the red wine, stock, tomato puree and can of tomatoes; stir in well and simmer for 25 minutes.

While the sauce is simmering fry the mince in a large frying pan until well cooked.

When the sauce is cooked, turn off the heat and add the fresh basil then blend the sauce with a hand bender until it is smooth.
5.
Pour over the cooked mince and mix thoroughly.
