Pesto Chicken with Prosciutto Crumb


6 slices prosciutto
2 cups fresh breadcrumbs½ cup freshly grated parmesan cheese2 tablespoons chopped fresh parsley10 small chicken fillets

1/3 cup sundried tomato pesto
spray oil
oven roasted vine tomatoes and rocket salad to serve


Pan fry or grill prosciutto until crisp, cool slightly and then finely chop.
Combine breadcrumbs, parmesan, parsley and prosciutto.  Spread each chicken fillet with a little pesto and then sprinkle 2 tablespoons of crumb mixture evenly over each fillet and lightly spray with oil.
Place chicken in a single layer in a baking dish and cook at 200 degrees for 30 mins.  Cut each chicken breast into slices and serve with oven roasted tomatoes and rocket.
