Maple-Baked Pork
Ingredients to serve 4
¼ cup olive oil, plus 2 tbsp
½ cup maple syrup
8 carrots, peeled and chopped
into batons
20 sage leaves
4 garlic cloves, crushed, skin on
4 pork-loin cutlets
Method
1 Preheat oven to 200°C. Place 1/4 cup olive oil and maple syrup in a bowl, season with salt and pepper, and whisk to combine.
2 Put carrots, sage, and garlic in a large baking dish and spoon over half the maple-syrup mixture.
3 Cook in oven for 15-20 minutes or until carrots start to caramelise. Heat oil in a nonstick frying pan and cook pork for 1-2 minutes on each side. Set pork on top of carrots in baking dish and pour over remaining maple-syrup mixture.
4 Return to the oven and cook for another 8-10 minutes or until pork is cooked through. Season with black pepper. Serve with salad.
