Grilled Zucchini Quesadilla with Lime and Cumin


1/2 med zucchini
1/2 tbsp olive oil
2 tsp cumin
1/4 tsp chile flakes
1/2 lime juice and zest
1/2 tbsp honey
85g mozzarella cheese
4 wholemeal tortillas


Cut zucchini into slices and place in large bowl.  Whisk the olive oil, cumin, chile flakes lime juice and zest, and honey.  Pour over zucchini and sit for at least 30mins.  When ready to cook, place on grill and cook each side until browned (2-3mins)  Remove from heat and cut into small strips.  Layer strips on half of the tortilla and sprinkle cheese on top.  Return to grill and cook on each side until tortilla is crisp and cheese has melted.  Serve with greek yogurt mixed with lime juice and corriander.
Is also delicious if you add eggplant and pumpkin!
