Little Mocha Kisses
175g SR flour
75g caster sugar
75g butter
2 tsp instant coffee granules
1 tsp hot water
1 egg
Heat oven to 180. Place butter, sugar and flour in food processor
and blend until the mix looks like breadcrumbs.
In a small bowl mix the coffee with the hot water and then add
egg and whisk together. Add this to the processor and process until
the dough comes together. Chill in fridge for 20 mins.
Dust work surface with icing sugar and roll out dough until 5mm thick,
then cut out 50-60 hearts using a 4cm heart shaped cutter.
Place hearts on baking trays and bake in oven for 10-15 mins.
Cool and then sandwich together with chocolate icing.
Chocolate Icing
Mix 50g soft butter, 100g icing sugar and 3 tsp cocoa powder until smooth.
Can store in an airtight container for 2-3 days.
